More New Recipes from Celebrations Cookbook

ThIMG_0568.JPGis weekend I tried a few more recipes from Celebrations Cookbook from Against All Grain. The first was the potato salad recipe. Before Paleo I would judge a restaurant based on their mashed potatoes and rolls/bread (Texas Roadhouse and Cheddar’s Honey Butter Croissants were high on my list). I miss white potatoes. I’ve never tried white sweet potatoes (a.k.a. Hannah Sweet Potatoes). I loved the flavor and texture of these sweet potatoes. They are the closest I’ve had to regular white potatoes in years. I was so excited to add this to the list of dinner sides. It also inspired me to think of how I could create a paleo-friendly chicken pot pie recipe with white sweet potatoes. I’ll let you know how that goes :).

IMG_0608.JPGThe next recipe that I tried were the Sunbutter Buckeyes. My mom always makes the best treats around Christmas time – buckeyes, peanut butter fudge, chocolate fudge, toffee, potato bread rolls, and more. It is a challenge not to eat those delicious treats. I was so excited to see buckeyes in the Celebrations Cookbook. They are not identical to Mom’s, but they are a pretty close second. They melt in your mouth and have a nice nutty flavor. I won’t feel like I’m missing out this year! There is also a Christmas Fudge recipe in the Celebrations Cookbook. Yay!

Tonight I tried the special sauce recipe on my burger. I had a feeling I would like this one since I love mayo and pickles on my burger. Yum!! It was so good. I kept adding more special sauce. The best thing about these recipes is the feeling that I am not missing out on tasty or traditional foods due to a restricted diet (doesn’t feel so restricted anymore).

Spider and Shortbread Cookies

img_0532My Celebrations Cookbook arrived today! YAY! I enjoyed looking through the pages and putting stickies on the recipes that I want to try first. I let the kids choose the first recipe. They chose the Spider Cookies. Peanut butter anything, especially cookies, are my Dad’s favorite and I definitely inherited his love for peanut butter. Unfortunately peanut butter isn’t on my list of foods I can have any longer and I missed that flavor so much. These are the closest I have had to my mom’s amazing peanut butter cookie recipe. Danielle’s Spider Cookies are made with Sunflower Butter. I was totally skeptical of Sunflower Butter, but I was pleasantly surprised with the flavor.
IMG_0541.JPGI was too excited to stop baking so I tried the Shortbread Cookies that are an extra recipe that you get if you pre-order Celebrations Cookbook. I love that they have a delicious buttery flavor. They would be perfect with a little fresh jam. I’m so excited to cook/bake more from this cookbook and have more options to stick with Paleo and feel my best. Thank you Danielle for these amazing recipes!

New Cookbook!

One of the first obstacles that I learned about when adopting a new diet for better health was how much our world revolves around food, especially for celebrations. Every birthday, party, holiday, and special occasion can be a struggle for people with dietary needs. My mother-in-law bought me my first Against All Grain cookbook for Christmas and it was a huge blessing, then my friend Heather gave me Against All Grain – Meals Made Simple with even more fantastic recipes. The recipes are delicious and include adaptations of foods I would eat before. I’m so excited that a new Against All Grain cookbook is being released September 27th and it is focused on foods that are typically served during celebrations – Celebrations Cookbook! Hot Ham Roll-Ups (Gluten Free)

I attempted to Paleo-fy a recipe that looked oh so delicious to me and it turned out really well! I used a box of Chebe Garlic Onion Breadstick mix and prepared it as directed (without dairy) and rolled it out like a square pizza crust between two sheets of parchment paper. I covered the dough with deli ham. I rolled it up and cut it into slices like cinnamon rolls. I put each roll-up in a pie pan. On the stovetop I melted a 1/2 cup of real butter (this could be substituted if you want to go dairy free), 1 1/2 tablespoons of molasses, 2 tablespoons of coconut sugar, 2 tablespoons of Dijon mustard, 1 tablespoon of coconut amminos, and 1 tablespoon of poppy seeds. I drizzled the glaze over the ham roll-ups and baked them for 25 minutes at 375 degrees. They were amazing!

  

Paleo at a Mac N’ Cheez place – what?

It’s been a while since my last post. It’s been a busy, but fun summer. I decided to venture in Sweet Loraine’s Mac n’ Cheese. I found a very yummy and fresh meal. I ordered the Malibu Chicken and Bacon wrap without a wrap or dressing. So yummy! Add some mayo or your favorite paleo dressing and you have a great meal. 

 

Macaroons

I love to add a little sweet treat to my lunch and wanted to try something new so I tried another terrific recipe from Against All Grain. It was the chocolate coconut macaroon recipe. My son loved making them with me. I don’t think they will last long in this house 🙂

Birthday Cake!

One of the items I worried about missing when I started eating healthier was birthday cake. How could I ever make something tasty that didn’t have refined sugar, butter, etc. I experimented this week for Andy’s birthday with great results. I began with using a round cake pan and the brownie recipe from Against All Grain Meals Made Simple. I learned that I should have used two round cake pans as my brownies were overflowing out of the one pan. I then used Elana’s Pantry Chocolate Frosting recipe. I added a few Enjoy Life chocolate chips on top and strawberries. My husband says I should make this every week. We put the cake in the fridge and it got even more fudgey and fantastic.

Crepes, mmm…

I discovered another great recipe from Against All Grain, which are wraps (paleo friendly). They were pretty easy to make on my griddle. For breakfast I used them to make crepes. I spread some Earth Balance Soy Free butter over the warm crepe, then sprinkled it with coconut crystals and cinnamon. I rolled them up and drizzled some pure maple syrup over them. It was sweet and amazing! For dinner I used the wraps to create Cuban Pork Paninis (recipe is also in Against All Grain Meals Made Simple cookbook). Another tasty dish. I love adding more delicious options to the list.
