A Camping We Will Go…

This is my first summer since changing the way I eat. Winter was pretty easy as I didn’t travel much, but I knew summer being a busier time of year on the weekends could be more challenging. Here are some of the foods that I am packing for the weekend on the go:

  • Pancake Mix – one container with dry ingredients and then add the wet ingredients
  • Bacon
  • Paleo Bread for French Toast
  • Bananas
  • Grapes
  • Applesauce
  • Raw Pecans mixed with¬†Enjoy Life Chocolate Chips
  • Banana Bread (I will share the recipe soon, I use maple syrup for sweetener)
  • Baby Carrots
  • Hamburgers minus the bun (lettuce, tomato, mayo, ketchup, mustard, pickles, yum!)
  • Chicken Kabobs
  • Water
  • 100% Apple Juice
  • Beef Jerky
  • Hard-Boiled Eggs
  • Celery Sticks
  • Cashew Butter

Dinner Ideas

Andy made a very yummy dinner. He put a little healthy BBQ sauce and some grilling seasoning on pork chops and baked some sweet potato fries. We always try to have at least one fruit or veggie so we added organic unsweetened applesauce to complete the meal. Yum!


Paleo Pancakes

Below is my favorite pancake recipe:
1 cup Almond Flour
1/2 cup Tapioca Flour
2 Tbsp Coconut Flour
1/2 Tsp Salt
2 Tsp Gluten Free Baking Powder
1 Tbsp Coconut Crystals
1 cup Coconut Milk
2 Tbsp Coconut Oil (melted)
2 Eggs

Mix all dry ingredients together. In a separate bowl mix all wet ingredients together. Combine the wet and dry ingredients with a whisk. I use my electric griddle on 350 degrees.

Paleo French Toast

Paleo French Toast Every Sunday I bake a loaf of bread for the week for sandwiches and french toast. I switch up my recipes between the Against All Grain bread recipe or Guilty Kitchen’s Paleo Bread recipe¬†. To make french toast I whisk together a few eggs, coconut milk, and a splash of pure vanilla extract. I then dip the bread in the mix and cook it on my electric griddle. It browns up nicely. I love to top it with fresh fruit and/or maple syrup.
