Below is my favorite pancake recipe:
1 cup Almond Flour
1/2 cup Tapioca Flour
2 Tbsp Coconut Flour
1/2 Tsp Salt
2 Tsp Gluten Free Baking Powder
1 Tbsp Coconut Crystals
1 cup Coconut Milk
2 Tbsp Coconut Oil (melted)
Mix all dry ingredients together. In a separate bowl mix all wet ingredients together. Combine the wet and dry ingredients with a whisk. I use my electric griddle on 350 degrees.
Every Sunday I bake a loaf of bread for the week for sandwiches and french toast. I switch up my recipes between the Against All Grain bread recipe or Guilty Kitchen’s Paleo Bread recipe . To make french toast I whisk together a few eggs, coconut milk, and a splash of pure vanilla extract. I then dip the bread in the mix and cook it on my electric griddle. It browns up nicely. I love to top it with fresh fruit and/or maple syrup.
